Sift together the flour, baking powder, sugar and salt. Add the elderflowers. Make a well in the center and add the egg, milk and shortening all at once and stir until all the ingredients are just blended, do not over-beat. The mixture should be lumpy. Fill the muffin tins 2/3 full and bake in a 400ºF. oven for 25 minutes. You now have sweet, moist and delicious muffins! |
