Elderflower Muffins

1 1/4 cup of flour
2 1/2 teaspoons of baking powder
2 tablespoons of sugar
3/4 teaspoons of salt
1/2 cup of elder flowers
1 well beaten egg
3/4 cup of milk
1/3 cup of shortening, melted 

Sift together the flour, baking powder, sugar and salt. Add the elderflowers. Make a well in the center and add the egg, milk and shortening all at once and stir until all the ingredients are just blended, do not over-beat. The mixture should be lumpy. Fill the muffin tins 2/3 full and bake in a 400ºF. oven for 25 minutes. You now have sweet, moist and delicious muffins!
