Marinated Greek Mushrooms

1 pound of button mushrooms, cleaned
1/2 cup of chopped fresh coriander
1/2 cup of chopped red onions
1/3 cup of sliced black olives
1/3 cup of balsamic vinegar
2 tablespoons of water
2 tablespoons of olive oil
1 tablespoon of freshly squeezed lemon juice
1 teaspoon of minced garlic
1/2 to 3/4 teaspoon of chili powder or 1/2 teaspoon of fresh jalapeno pepper
1/4 teaspoon of freshly ground black pepper
2 ounces of feta cheese, crumbled 

In a large bowl, combine the mushrooms, coriander, red onions, olives, vinegar, water, olive oil, lemon juice, garlic, chili powder, pepper and feta. Stir the ingredients well. Cover and chill from 1 hour to overnight, mixing occasionally. * The longer the mushrooms marinate, the more flavorful they will be!
