3/4 pound of asparagus or green beans 1 tablespoon of vegetable oil 1 1/2 teaspoons of Red Curry Paste 1 tablespoon of fish sauce 1 tablespoon of water 1/4 teaspoon of black pepper
Snap off tough ends of asparagus stalks. Cut asparagus diagonally into slices about 1/8 inch thick. If using green beans, snap off the ends. Cut diagonally into 1 inch pieces. Cook green beans in boiling salted water in a medium size saucepan for 3 minutes or until crisp tender, drain. Do not precook asparagus. Heat a wok over medium high heat. Add oil and heat. Stir in curry paste. Add asparagus or green beans, stir fry for 1 minute. Add fish sauce, water and pepper, stir fry for 1 minute. Spoon onto a platter. Makes 4 servings
