Italian Sausage Stuffing Bake

1 2/3 cups of water
one 6 ounce package of STOVETOP Savory herbs Stuffing Mix
1 1/2 pounds of Italian sausage. cut into 2 inch slices
1 large green & 1 large red pepper, sliced
1 large onion, sliced
one 15 ounce can of tomato sauce

Preheat oven to 400ºF.  Add hot water to stuffing mix, stir just until moistened. set aside. Cook and stir sausage in large skillet on medium high, until no longer pink in center, drain. Add peppers and onions, cook until the vegetables are crisp tender, stirring occasionally. Spoon into a 13 x9  inch baking dish. Cover with tomato sauce and the prepared stuffing. Bake for 25 minutes or until heated through. Makes 6 servings

10/12/07 - I made this for dinner last night, I substituted a can of spicy V8 (11 ounces) for the tomato sauce. I also added about 2 pounds of Spicy Italian sausage. Everyone loved it.  I also made this ahead of time, combining all ingredients, placing in refrigerator,  until I was ready to prepare dinner. Sybil & Sasha
