Sausage Stuffing Balls

1 pound of fresh pork sausage
1 package of (7-8 oz.) seasoned stuffing
3/4 cup of hot water
1/2 cup of chopped onions
1/2 cup of chopped celery
1 beaten egg
1/2 teaspoon of baking soda

Combine stuffing with hot water. Break sausage into small pieces. Add to moistened stuffing. Stir in onions, celery, egg and baking soda until blended. Shape into balls using 1/4 cup. Place on baking sheet. Cover with foil tightly. Bake at 325ºF. for 15 minutes. Remove foil. Increase oven temperature to 350ºF. Bake 25 minutes or until sausage is done.
