Microwave the spaghetti squash for 9 minutes or so and then remove the "spaghetti" See below. Place the spaghetti in a colander and let drain over a bowl. Sauté the garlic in butter for 2 minutes. Add the drained juice and parsley. Heat for 1 minute, then toss with "spaghetti". Sprinkle on cheese, salt and pepper and toss again. Serves 4 Preparation of spaghetti: Pierce the skin of whole squash and microwave for 15 to 20 minutes. Let it stand for 5 minutes. Or, pierce in several places, set in a casserole dish, add 1 inch of water and bake in a preheated 375ºF. oven until tender. 50 to 75 minutes depending on the size. Cool for 5 minutes, cut in half lengthwise and scoop out seeds. Use a fork to separate the flesh into spaghetti like strands. |
