| Lemon - Pecan Green Beans 1 pound of fresh green beans 1/4 teaspoon of salt 1 tablespoon of olive oil 1/4 cup of sliced green onions 1/4 cup of chopped toasted pecans 2 teaspoons of finely chopped fresh rosemary 2 teaspoons of fresh lemon juice 2 teaspoons of grated lemon rind |
Instructions: Remove the ends of the beans and sprinkle with salt. Arrange the beans in a steamer basket, and place over boiling water. Cover and steam for 10 minutes or until crisp-tender. Plunge the green beans into cold water to stop the cooking process, drain and set aside. Heat the olive oil over a medium heat in a large skillet. Add the green onions and cook, stirring constantly, about 3 minutes. Add the green beans, pecans, rosemary, and lemon juice, cook, stirring constantly until the mixture is thoroughly heated. Sprinkle with lemon rind. Garnish with lemon and rosemary if desired. Serve immediately. Makes 4 servings |
