Oven Baked Chicken with Garden Sauce
1 4 pound roasting chicken, cut into pieces salt and pepper to taste frozen mixed vegetables, or any vegetables of your choice 1 teaspoon cornstarch, (use more as needed) pinch of saffron |
Instructions: Preheat the oven to 375ºF degrees. Season the chicken with salt and pepper. In a shallow roasting pan, bake for approximately 17 minutes a pound, until the pieces are lightly browned. In a saucepan, cook the vegetables according to package directions. While stirring constantly, add cornstarch until the liquid reaches the consistency of smooth white sauce. Add the saffron, mixing well to combine. Season with salt and pepper. Remove chicken from the oven, pour the garden sauce over the chicken, and return to oven for approximately 15 minutes more. Great over noodles or rice. |
