| Pumpkin Puffs 3 cups of fresh pumpkin, cooked and mashed 1 1/2 cups of flour 1/4 teaspoon of allspice 1/8 teaspoon of nutmeg 1/8 teaspoon of ginger 1/4 teaspoon of cinnamon 1/2 teaspoon of baking powder 1/2 teaspoon of salt 1 egg, beaten |
Instructions: Remove the seeds and fibers from the fresh pumpkin, cut into pieces and pare each piece. Cut again into small pieces, cover with boiling water and cook until tender, about 20 minutes. Drain thoroughly and mash well. Measure 3 cups. Sift the flour and dry ingredients together and add to the pumpkin with the beaten egg. Heat deep fat to 370ºF. or until a bread cube brown's, about 1 minute. Drop the pumpkin mixture in the hot fat in spoonfuls, a few at a time and fry until golden brown about 5 minutes. Drain onto paper towels. Sprinkle with powdered sugar, if desired. Serves 8 |
