Chitlin Salad
2 cups of cooked chitterlings, cut into small pieces Juice of 1/2 lemon 1/2 cup of diced celery Salt and pepper -- to taste Lettuce Paprika Mayonnaise |
Instructions: Sprinkle the chitterlings with lemon juice and let stand for at least 1 hour. Add celery, mayonnaise, salt and pepper. Serve on beds of lettuce. Dust with paprika. yield: 2-3 servings |
