| Southern Biscuit Muffins 2 1/2 cups of flour
1/4 cup of sugar
1 1/2 tablespoon of baking powder
3/4 cup of cold butter or margarine
1 cup of cold milk |
Instructions: Preheat oven to 400ºF. Grease 12 muffin cups. (The muffins brown better on the sides and bottom when baked without paper liners.) In large bowl, combine flour, sugar and baking powder. Cut in butter until mixture resembles coarse crumbs. Stir in the milk just until flour mixture is moistened. Spoon into muffin cups. Bake for 20 minutes or until golden. Remove from pan. Cool on wire rack. Makes 12 muffins |
