Sweet Potato Chips 3 pounds of large sweet potatoes, about 5
2 tablespoons of Soul Food Seasoning
2 egg whites, lightly beaten
nonstick cooking spray |
Instructions: Preheat your oven to 400ºF. Clean and scrub the sweet potatoes thoroughly. Peeling the potatoes before slicing them is optional. Using a sharp knife or automatic slicer, slice the sweet potatoes about 1/8 inch thick. Place the sliced potatoes in a large bowl, sprinkle with the soul seasoning and pour in the egg whites. Stir to coat all the slices evenly. Spread the potatoes on a nonstick baking sheet (lightly coated with nonstick cooking spray) in a single layer. Do not allow the potatoes to overlap or else they will stick together. Spray the potatoes with nonstick cooking spray 2 times.
