Deviled Eggs 1
6 hard boiled eggs
2 teaspoons of finely minced onion
2 teaspoons of finely chopped celery
1/4 teaspoon of dry mustard
2 teaspoons of sweet relish
1/4 teaspoon of salt
2 or more tablespoons of mayonnaise
paprika
2 tablespoons of sliced olives or chopped sweet pickles |
Instructions: Cut your hard boiled eggs in half, lengthwise while they are hot. Put the yolks in a bowl and quickly mash with a fork. Add your onion, celery, dry mustard, relish, salt and enough mayonnaise to make a soft paste. Now taste and season it to adjust your seasonings. Rinse your egg whites if necessary, then refill each one with the egg yolk mixture. Arrange on a serving plate and sprinkle lavishly with paprika. Cover with clear plastic wrap and refrigerate for at least 1 hour. This will allow the egg mixture to set. Before serving, garnish with slivers of olives, pickle and or sweet red pepper. |
