1 teaspoon of lemon juice
1/2 teaspoon of drained capers, optional
4 onion rolls or sandwich buns
4 fillets of Cajun catfish, hot or warm
4 lettuce leaves
4 slices of tomato |

Make the sandwich sauce by mixing the mayonnaise, lemon juice, and capers. Toast the buns and spread with sandwich sauce. Stack the buns with fish, lettuce and tomatoes. Makes 4 servings |
