2 tomatoes 1 cucumber, thinly sliced 1 stalk celery, chopped 1/4 cup of yogurt 1 teaspoon of creamed horseradish 1/2 teaspoon of honey Freshly ground black pepper 1 green onion, chopped
Using a small knife, cut a continuous spiral of peel from each tomato. Turn the peel inside out and coil it to resemble a rose. Dice the remainder of the tomato. Combine with the remaining ingredients except the green onion. Serve in a bed of salad greens. Sprinkle the green onion over the top of the salad. Garnish with the tomato roses. Serves 2
