| Corny Rice Casserole
1 package of yellow rice mix 1 can of Mexicorn, drained 1/4 cup of margarine 1 can mushroom soup, undiluted 1/2 cup of Cheddar cheese, grated |

Cook rice according to package directions. Add next 3 ingredients and mix well. Pour into 9 x 13 inch casserole and bake at 350ºF. for 30 minutes. Top with cheese and bake 15 more minutes. (You can add 2 cups cooked, cubed ham before baking, to make main dish.) Serves 8 to 10 |
