Mix together stuffing, melted butter, eggs, chicken broth, bacon and chopped figs in a bowl. Spoon the mixture into 12 greased muffin cups. Top each muffin with a whole fig. Bake in a preheated 350ºF. oven for 30 - 35 minutes or until firm. (Cover muffins with foil if figs brown too quickly.) Unmold and serve with your roasted turkey. These muffins can be made ahead of time and baked. When ready to use, cover with foil and bake in preheated 350ºF. oven for 15 minutes. These muffins may also be frozen. When ready to use, unwrap and heat, covered lightly in preheated 350ºF. oven for 30 - 35 minutes. Microwave: Spoon mixture into 12 greased custard cups; arrange cups 6 at a time, in a circle in microwave oven. Microwave on HIGH 4 -5 minutes Serves 12 |
