Brown the ham, onion, poultry seasoning and sage in butter in saucepan until the onion is tender. Add 1/2 cup of gravy. Toss lightly with bread cubs, cornbread crumbs, egg, and raisins. Fill body and neck cavities of turkey with stuffing, secure with skewers. Fasten legs by tying with string. Tuck wings behind shoulders. Place in roasting pan and cover loosely with foil. Roast in preheated 325ºF. oven for 4 hours, allowing 25 minutes per pound or until internal temperature reaches 185ºF. and leg moves easily. Uncover during last hour to brown, basting occasionally. Remove turkey from pan. Spoon off fat, saving 6 tablespoons of drippings. On top of range, in roasting pan, combine the remaining gravy and drippings. Heat, stirring to loosen browned bits. Serve with turkey & stuffing. Serves 8 - 10 |
