6 baked potatoes 6 to 12 tablespoons of butter 12 tablespoons of sour cream Salt & pepper to taste 3 tablespoons of chives (optional) 1 cup of cheese, grated (Cheddar, Parmesan or as desired) |

Cut potatoes in half lengthwise and hollow out potatoes, saving skins. Beat inner part of potatoes and add other ingredients, beating well. Re-stuff the potatoes and bake for 1/2 hour at 350ºF. |
