Sweet Potato Supreme

This is a favorite recipe that has been in our family for ages, we share it for your gourmet pleasure.

3 medium sweet potatoes
1 small carton of cherries
1 cup of sugar
1 stick of butter
1 teaspoon of lemon juice
half cup of condensed milk
2 cups of miniature marshmallows
a dash of cinnamon & nutmeg to taste
3 eggs
a couple of pineapple rings

After boiling the sweet potatoes to a soft stage, mash and mix with the other ingredients, except the cherries and marshmallows. Spoon into a casserole dish, layered with pie crust. Layer with cherries and marshmallows, top with the pineapple rings and bake in the oven at 375ºF. for approximately 35 minutes. Let it cool and get down to down home goodness!
