| Potato Chip Cookies
2 sticks of butter, softened
1 cup of sugar
1 cup of brown sugar
2 eggs, beaten
2 cups of self-rising flour
1 teaspoon of soda
6 ounces of butterscotch pieces
2 cups of potato chips, crushed |

Mix ingredients in this order. Roll in small balls. Bake 10 to 12 minutes in 300ºF. oven on ungreased cookie sheet. Space about 2 inches apart. Cool before removing. Place on paper towels. Yields approximately 5 dozen. |
