
| Toasted Coconut Pie
3 beaten eggs 1 1/2 cup of sugar 1/2 cup of butter or margarine, melted 4 teaspoons of lemon juice 1 teaspoon of vanilla One 3 1/2 ounce can (1 1/3 cup of) flaked coconut One unbaked 9 inch pastry shell |

Combine the eggs, juice, butter or margarine, lemon juice and vanilla. Stir in the coconut. Pour the filling into shell (unbaked pastry shell). Bake in moderate oven 350ºF. for 40 to 45 minutes but no more. Cool well before serving. |
