Pineapple Upside Down Cake
1 1/4 cup of sifted flour 1 3/4 teaspoon of baking powder 3/4 teaspoon of salt 3/4 cup of sugar 1/3 cup of shortening 1 egg 1/2 cup of milk 1 teaspoon of vanilla |

Sift together first 4 ingredients and add last 4 ingredients to sifted mixture. Beat 3 minutes at low to medium speed. Cover greased 9-inch round cake pan with 1/4 cup firmly packed brown sugar and 2 tablespoons melted butter. Arrange small can of crushed pineapple and maraschino cherries in sugar. Pour batter over fruit and bake at 350ºF. for 35-40 minutes. Serves 8. |
