| Cheesy Broccoli Soup
2 cups of fresh broccoli pieces
1 medium onion, quartered
One 14 1/2 ounce can of chicken broth
1/2 teaspoon of Beau Monde seasoning (opt.)
1 cup of milk
2 tablespoons of flour
Dash pepper
1/4 cup of Velveeta cheese |

Combine broccoli, onion, half of chicken broth and the seasoning in 2 quart glass mix 'n pour bowl. Cover with plastic wrap. Microwave (High) 8 to 9 minutes or until broccoli is tender. Let stand 5 minutes. Pour mixture into blender or food processor container. Cover and process at medium speed until smooth. Return mixture to mix 'n pour bowl. Combine milk and flour until smooth. Blend into hot vegetable mixture. Add pepper. Microwave (High), uncovered 3 to 4 minutes or until mixture boils and thickens, stirring twice. Stir in cheese until blended. Mix in remaining chicken broth. Cover and refrigerate until chilled. NOTE: Other favorite vegetables such as cabbage, carrots, zucchini or cauliflower can be substituted for the broccoli. Or, use a combination of 2 to 3 vegetables. Serves 4 to 5. |
