Rub the salt, allspice and pepper well into steak. Dredge with flour. Pound in the flour with edge of a plate or mallet. Heat the shortening in a heavy casserole dish. Brown the meat quickly in hot fat on both sides. Add the onion and tomatoes. Cover and bake in a preheated oven at 350ºF. for 1 1/2 hours or until the meat is tender. Check occasionally for moisture. If necessary add a little hot water, or tomato to prevent sticking. Makes 6 servings |
