Coat the pork in 2 tablespoons of flour. Heat 1 tablespoon of butter in a nonstick skillet. Add the cutlets, cook for 1 minute on each side. Transfer to a plate. Add the remaining butter to skillet. Add shallots and apples, sauté for 5 minutes. Add the cider and broth, cook for 3 minutes, until the apples are tender. Whisk the remaining tablespoon of flour and cream in bowl. Stir into the skillet. Add the salt and pepper, cook, stirring, 3 minutes or until thickened. Pour over the pork cutlets. Garnish with parsley. Makes 4 servings |
