| Family Favorite Meatloaf
2 pounds of ground beef, 80% lean
1 teaspoon of chili powder
3/4 teaspoon of salt
1/8 teaspoon of pepper
8 1/4 ounces of corn kernels, drained and chopped
1 medium of onion, chopped
1 cup of soft bread crumbs
2 eggs, slightly beaten
1/3 cup of green bell pepper, chopped
1/3 cup of barbeque sauce

Sprinkle chili powder, salt and pepper over ground beef. Add corn, onion, bread crumbs, eggs, bell pepper and barbecue sauce, mixing lightly but thoroughly. Shape beef mixture into 10 x 4-inch loaf. Place meatloaf on rack in shallow roasting pan. Bake in 350ºF. oven 1 1/2 hours or until cooked through. Serving Ideas : Cut loaf into slices and spoon salsa over slices. |
