2 teaspoons of saltpeter
1 teaspoon of brown sugar
1 teaspoon of mixed pickling spice
1 clove garlic
3 1/2 - 4 pound beef brisket |

Pour cold water in crock or enamel container, add the remaining ingredients mixing thoroughly. Refrigerate for 2 - 2 1/2 weeks. Place meat in cold water, simmer for 4 hours or until tender, adding brine seasoning if flavor is lost. |
