| Low Fat Grapenut Pudding
3 cups of skim or 1% milk 2 egg whites 1 egg Egg Beaters 2 to 4 tablespoons of sugar 1 teaspoon of vanilla 1/4 teaspoon of nutmeg 1/2 teaspoon of cinnamon 1/2 to 2/3 cup of Grapenuts cereal 1/2 cup of raisins, if desired |
| Heat milk just until small bubbles form around edge of saucepan. In a measuring cup beat egg whites and egg until blended, add enough Egg Beaters to measure 1 cup. Mix in sugar, vanilla, nutmeg and cinnamon. Beat lightly with fork. Pour this mixture slowly over scalded milk and stir until sugar is dissolved. Strain into Mazola sprayed 1 1/2 quart baking dish. Stir in Grapenuts and raisins. Place dish in a larger pan that contains 1 1/2 inches water. Bake 20 minutes at 325ºF. Stir with fork and continue baking another 40 minutes or until a knife inserted in the center comes out clean. |
