| Nahit - Chickpeas Chickpeas are traditionally served on the Friday following the birth of a child, as well as at Purim. 2 cups of dried chickpeas Salt Freshly ground black pepper Wash and pick over the chickpeas. Soak them overnight in water to cover, drain. Place the chickpeas in a large saucepan with cold water to cover and bring to a boil. Add the salt and simmer until tender, anywhere from 1 to 3 hours, depending on the freshness of the beans. Add boiling water from time to time to keep the beans covered. Drain the beans and dry well with paper towels. Place in a serving bowl and sprinkle with salt and pepper. Refrigerate until ready to serve. Makes 4 servings |
