
| Sicilian Sausage Soup
1/4 pound sweet Italian sausage 1/2 cup onion, finely chopped 1/4 cup carrots, chopped and peeled 1/4 cup celery, chopped 16 ounce can Italian peeled tomatoes 14 ounce can chicken broth 2 tablespoons parsley 1/2 teaspoon basil 1/2 cup orzo (Rice shaped macaroni) Salt and Pepper |

In a large saucepan, brown sausage, breaking into small pieces as it cooks. Add onion and sauté until tender. Drain fat. Add vegetables, chicken broth, parsley, and basil. Bring soup to boil; stir well. Cook over moderate heat 15 minutes. Stir in orzo and salt and pepper to taste. Reduce heat to low; simmer covered 20 minutes or until orzo is tender. Servings: 4 |
