1 1/2 cup of Quick rice 1 tablespoon of butter or margarine One 1 pound jar of jar salsa 1 teaspoon of thyme 1 or 1 1/2 lbs. fish fillets (trout or redfish) 1/2 teaspoon of salt 1/4 teaspoon of pepper 2 tablespoons of margarine 1/2 teaspoon of paprika 1 small red pepper, sliced 1 small yellow pepper, sliced Cilantro or parsley for garnish |

In microwave-able casserole, stir rice, 1 tablespoon butter, salsa and thyme. Cover and microwave on high for 7 minutes, stir once or twice, stir in peppers. Place fish fillets on top of rice. Salt and pepper. Dot with butter and sprinkle with paprika. Cover and microwave on high 4 or 5 minutes. Let stand 5 minutes. Garnish with cilantro or parsley. Serves 4 to 6. |
