| Cajun Catfish 1 tablespoon of Cajun seasoning or blackening spice blend 1 tablespoon of margarine or butter 2 teaspoons of chopped fresh parsley Sprinkle the seasoning on both sides of the fish. If time permits, refrigerate for 1 hour. Melt the margarine in a large heavy skillet or griddle over high heat. Add the fish and cook for about 8 minutes, turning the fish two or three times. Serve hot, garnish with chopped parsley. Makes 4 servings |
