Apple Syrup

3 cups of apple juice, boiled down to 1 1/2 cups
2 tablespoons of butter
2 tablespoons of whole wheat flour

Melt the butter on low heat. Stir in the flour. Gradually add the boiled down apple juice, stirring constantly. Raise the heat until the mixture almost simmers, but do not allow it to boil. Cook, stirring constantly until the sauce thickens, about 5 minutes. This sauce is great on pancakes or just spooned over a plain cake. Makes 1 1/2 cups
