3 1/4 cups of water 1 cup of good dessert wine juice of one lemon 2 cups of sugar 1 box of unflavored gelatin 1/2 cup of raspberry liqueur 1 cup of mixed berries
Place the water, wine and lemon juice in a pan and bring to a boil. Stir in the sugar until dissolved and remove from heat. Sprinkle in the powdered gelatin. Stir in the raspberry liqueur and leave the liquid to cool but do not let it set. Pour about half of the cooled mixture into a bowl and leave to set in the refrigerator. Once solid, add the berries and the rest of the gelatin and leave to set completely. Serve with whipped cream. Serves 4
