

| Chocolate Zucchini Bread 2
3 eggs beaten or 3/4 c. egg substitute 2 cups of sugar 1 cup of vegetable oil 4 tablespoons of unsweetened cocoa 1 teaspoon of vanilla 2 cups of grated zucchini 3 cups of flour 1 teaspoon of salt 1 teaspoon of baking soda 1 teaspoon of cinnamon 1/4 teaspoon of baking powder |

Mix beaten eggs, or egg substitute, sugar, oil and cocoa. Add vanilla and zucchini and mix. Sift remaining dry ingredients and add to zucchini mixture and mix well. Lightly grease 2 loaf pans. Pour bread batter into pans. Bake at 350ºF. for 50-60 minutes. Makes 2 loaves. Tastes great with cream cheese icing! |
