
|  Here's an Italian idea fused with favorite African American ingredients, hot pork sausage, flavorful greens, crushed red pepper and wrapped in a cheesy pastry crust. Greens 'n Sausage Pizza Pie 4 large collard green leaves 1 cp of water 1 package(12 ounces) of bulk hot pork sausage 1 can (8 ounces) of pizza sauce 1/2 teaspoon of dried oregano leaves 1 3/4 cups of Gold Medal all purpose flour 1/4 - 1/2 teaspoon of crushed red pepper 1/2 cup of cheese dip (at room temp) 1/4 cup of water 8 thin rings red and or green bell pepper 1 cup of shredded mozzarella cheese |

Wash collard green leaves. Cut off long stem at the base of each leaf, carefully shave the remaining thick stem. Chop leaves. Heat 1 cup of water to boiling in 2 quart saucepan. Add chopped collard greens. Boil 15 - 18 minutes or until softened, drain. Pat dry with paper towels. Meanwhile, heat oven to 375°F. Grease a large cookie sheet with shortening or spray with cooking spray. Cook sausage in 10 inch skillet over medium heat 8 - 10 minutes, stirring occasionally, until no longer pink, drain. Stir in pizza sauce, collard greens and oregano, set aside. Stir flour, red pepper, cheese dip and 1/4 cup of water in medium bowl, until soft dough forms. If dough is dry, stir in additional 1 - 2 tablespoons of water. Gather dough into a ball. Roll into 14 inch circle on lightly floured surface. Place dough on cookie sheet. Spread sausage mixture over dough to within 2 inches of edge. Fold dough over edge of sausage mixture. Top with bell pepper rings, sprinkle with cheese. Bake 25- 30 minutes or until crust is light golden brown and cheese is melted. Makes 4 servings |
