16 ounces of cream cheese, softened 8 1/2 ounces of crushed pineapple, drained 2 large eggs 1 medium kiwi peeled, sliced 1/2 cup of macadamia nuts, toasted 1/4 cup of margarine, melted 2 tablespoons of milk 1/3 cup of sugar 1 cup of vanilla wafer crumbs
Combine the crumbs and margarine; press onto bottom of 9-inch spring form pan. Bake at 350ºF. for 10 minutes. Combine cream cheese, sugar and milk, mixing at medium speed on electric mixer until well blended. Add the eggs, one at a time, mixing well after each addition. Stir in nuts; pour over crust. Bake at 350ºF. 45 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill. Before serving, top with fruit.
