| Cajun Meatloaf
1 tablespoon of butter 1 medium onion, chopped 1/2 cup of chopped celery 1/2 cup of chopped green bell pepper 2 cloves garlic, minced 3 slices firm white bread 1/3 cup of milk 1 1/2 pounds of ground beef round or chuck 1/2 pound of ground veal or pork 1 egg, beaten 1 teaspoon of ground cumin 1/2 teaspoon of cayenne pepper 1 teaspoon of salt 1 tablespoon of Worcestershire sauce 2 tablespoons of ketchup |

Heat oven to 350ºF. In a small frying pan melt butter; add onion, celery, green pepper and garlic. Cook until wilted. In a small bowl soak bread in milk and break into crumbs. In a large bowl place meats, vegetables mixture, bread with milk and remaining ingredients. Mix well and shape into a loaf. Place loaf in shallow pan, bake one hour; serve. Makes 6 servings. |
