| Stuffed Crawfish Baked Potatoes
6 baking potatoes 1 stick of butter 4 ounces of sharp Cheddar cheese 3 pods garlic, minced 1 cup of light cream 1/2 cup of chopped green onions 1 pound of crawfish tails, cooked 1/2 cup of New York sharp Cheddar cheese, grated |

Bake potatoes at 400ºF. for 1 hour. Make sauce of butter, 4 oz. sharp Cheddar cheese, garlic and cream. Cut potatoes in half lengthwise and scoop out. Put potatoes and mix with sauce. Add green onions and crawfish. Put mixture back in potato shells. Sprinkle with grated New York sharp and bake at 350ºF. until brown. |
