| Mango Bread
1/2 cup of shortening 1 1/2 cup of sugar 2 eggs 1/2 cup of sour cream or evaporated milk 2/3 cup of mashed well-ripened mangoes (3-5 med. size) 2 cups of all-purpose flour 1/2 teaspoon of baking powder 1/2 teaspoon of baking soda 1/2 teaspoon of salt 1 teaspoon of vanilla 2 1/2 cups of finely chopped cashew nuts | |
Mix shortening, sugar, and eggs. Add sour cream and mangoes. Mix well. Add flour, baking powder, soda, salt, and vanilla. Mix with electric mixer at medium speed for 2 minutes. Fold in cashew nuts. Pour into 2 greased loaf pans. Bake for 40 minutes to 1 hour at 350ºF. |
