Banana Nut Bread 1

8 tablespoons of unsalted butter, softened *plus additional for the pan
2 cups of all purpose flour * plus additional for the pan
1 tablespoon of baking powder
1/2 teaspoon of ground nutmeg
1/4 teaspoon of salt
2 large ripe bananas, peeled
1 teaspoon of vanilla extract
1/2 cup of sugar
1 large egg
1/2 cup of raisins
1/2 cup of chopped pecans 

Preheat your oven to 375ºF. Grease and flour a 9 x 5 x 3 inch loaf pan. Sift 2 cups of flour, nutmeg, baking powder and salt into a bowl. Mash the bananas with the vanilla with a potato masher until smooth. Cream 8 tablespoons of butter and sugar in a separate bowl, until light and fluffy. Add the egg and beat until well blended. Add the dry ingredients to the butter mixture alternately with the mashed banana, raisins and pecans, beginning and ending with the dry ingredients. Spoon the batter into your prepared dish, smoothing the top. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour. Let it cool for 10 minutes, before removing from the pan. Makes 1 loaf


Banana Nut Bread 2

1 cup of sugar
1 cup of packed brown sugar
1/2 cup of shortening
2 eggs, beaten
3 large bananas, mashed
1/4 cup of sour milk
1 tablespoon of vanilla extract
3 cups of flour
1 1/2 teaspoon of baking soda
1 teaspoon of baking powder
Salt to taste
1/2 bottle of maraschino cherries
1/2 bottle of cherry juice
1/2 cup of nuts

Cream the sugar, brown sugar, and shortening in mixer bowl until light and fluffy. Beat in the eggs, bananas, sour milk, and vanilla. Sift in the flour, baking soda, baking powder, and salt, stirring until moistened. Stir in the cherries and cherry juice. Fold in the nuts. Pour into a greased and floured loaf pan. Bake at 350ºF. for 1 hour, or until loaf tests done. Remove to wire rack to cool. Makes 1 loaf.

Banana Nut Bread 3

1 cup of sugar
1/2 cup of butter
2 eggs, beaten
1 tablespoon of frozen orange juice, undiluted
3 ripe bananas, mashed
1/2 cup of walnut pieces
1/4 teaspoon of baking soda
2 cups of self rising flour

Preheat your oven to 350ºF. Cream the sugar and butter together. Add the eggs and beat well with a wooden spoon or for 3 minutes with a mixer. Stir in the orange juice, bananas, and walnuts. Add the baking soda to the flour and blend well, then stir into the wet ingredients. Bake in a greased 5 x 9 x 5 inch loaf pan for 1 hour or until it tests done.
