Soak the beans in warm water for at least one hour. Wash the salt pork thoroughly of excess salt. Boil the salt pork for 30 minutes in boiler with water. Add the beans, shortening, sugar, and salt. Cook the beans on medium heat for 2 1/2 hours uncovered until tender. Serve over rice. Serves 5 to 6 |
