48 medium size shell macaroni, uncooked 1 cup of fresh spinach, firmly packed, drained well 2 tablespoons of grated Parmesan cheese 1/8 teaspoon of garlic powder 1/4 teaspoon of white pepper 1/3 cup of light process cream cheese product One 2 ounce jar of diced pimento, drained |

Cook pasta according to package directions, omitting salt; let cool. Position knife blade in food processor bowl. Add spinach and next 3 ingredients. Top with cover; process until smooth. Set aside. Place a small amount of cream cheese in each macaroni shell. Top with spinach mixture. Garnish with diced pimento. Makes 48 appetizer servings. |
