| Boursin Stuffed Mushrooms 36 small to medium size fresh mushrooms three 5 ounce packages of Boursin cheese with garlic and fines herbes, softened parsley Wipe the mushrooms with a damp cloth; remove stems, breaking off where they join the cap. Use the stems for soup. Spoon the cheese into mushrooms, or fill pastry bag and pipe cheese into mushrooms. Garnish with parsley sprig; refrigerate. Makes 3 dozen
