Instructions:
Remove the shells from the eggs. With a sharp knife, make 4 to 5 shallow cuts on both sides of each egg. Set them aside. In a large kettle, heat 2 tablespoons of oil over medium high heat for 1 minute. Add onions and sauté for 8 to 10 minutes or until the onions start to brown. Reduce the heat to medium and add the tomato paste and 1/2 cup of water. Stir well. Cook for 10 minutes, then add the remaining oil. Cook for 5 additional minutes. Add the salt, pepper, garlic, paprika, cumin and chicken. Reduce the heat to low and simmer, uncovered for about 30 minutes.
