| Apple Griddle Cakes
2 cup of unbleached flour
5 teaspoons of baking powder
2 teaspoons of sea salt
3 tablespoons of fructose
1 tablespoon of ground cinnamon
2 cups of milk
6 tablespoons of melted butter or canola oil
2 eggs, beaten
1 cup of unpeeled apples, finely chopped | |
Mix together flour, baking powder, salt, fructose, and cinnamon. Add milk, oil and flour mixture to eggs. Beat until smooth. Fold in apples. Oil griddle very lightly before baking. Pour on about 1/4 cup batter for each cake. Bake until top is bubbly and edges dry, turn and brown on other side. Makes 2 1/2 dozen cakes. |
